New Year's Day Breakfast Sandwich

I found myself awake before anyone else today, and I felt like my usual Greek yogurt and granola just wouldn't cut it. So I improvised.

Two slices bacon, one cage-free egg, one whole wheat English muffin.

1) Fry the bacon in a small pan over medium heat for about 8 minutes, flipping occasionally to check doneness. One fat is rendered and bacon is crispy, set aside bacon for later. Don't pour off the bacon fat!

If you are veggie, you can omit the bacon and substitute a big glug of olive oil. (Similar to frying an egg the Spanish way.) The egg, however, cannot be substituted. Sorry, vegans.

2) While the fat is still quite hot, over medium-high heat, crack an egg directly into the center of the pan. The white will cook almost instantly, developing what I can only call a crispy, lacey quality. It is, needless to say, super delicious. Turn the heat to low and cover the pan. This will trap the heat so that the top side of the white will cook as well.

3) While you're waiting for your egg to slow cook, toast your English muffin. Or your bagel. Or your toast. Whatever. I think an English muffin is best.

4) When the English muffin is toasted, check on the egg. Ideally the white should be entirely cooked, while the yolk is still slightly runny. You can adjust this according to your personal egg preferences.

5) Put the egg on one half of the English muffin. Put the bacon on the other half. Sandwich together. Eat over a plate, with the bacon half on the bottom so it can absorb yolky goodness.

Serve with black coffee and a whole citrus fruit. They'll cut the richness, perk you up, and make you feel nourished. Happy new year!
