This is an interesting article mostly about celiac disease, and people who need to go GF (gluten free) for medical reasons. I found it very interesting, and quite true, and its more articulate than me. Anyhow, I hope everyone who sees this will check out at least the first page.
Gluten Free: Millions Have Celiac, Few Diagnosed The main point of the first part of the article is that most people with celiac get misdiagnosed, sometimes for years or even decades before they find out that they have celiac (and during those years, their body becomes more and more damage from exposure to gluten). I know that a friend's most prominent symptom was arthritis, and her pain has drastically decreased since going GF. Obviously, not everyone with arthritis has celiac, but for those that do, going GF could help reduce their pain.
