I totally love red potatoes-fried, mashed, smashed, roasted, roasted & smashed-they are my favorite side dish. Lately I've been cutting them into bite-sized chunks, tossing them with olive oil, minced garlic, rosemary, and salt, and then roasting them in the oven until they're crispy on the bottom. Tonight it was too hot to heat up the oven though, so I decided to toss them into the crock pot.
I had about 3 lbs left from a 5 lb bag of medium to large red potatoes. I quartered the medium ones and cut the larger ones into pieces about the same size as the quarters. I sprayed the inside of my crock pot with Pam, tossed in the potato pieces, a few glugs of olive oil, and 2 tablespoons of homemade Italian dressing mix. Stirred it all up and cooked on high for 6 hours. At about the 4 hour mark I was frying bacon for The Boy and tossed about 1/2 cup of chopped, fried bacon pieces into the pot. These were so good, I may not go back to the oven when the weather gets cold.
