I did some work and managed to write a recipe for my vegan cinnamon buns:
- combine 2 cups flour and 1 packet active dry yeast in a bowl
- heat 1 cup soy milk*, 1/3 cup sugar*, 1/3 cup soy margarine* and 1 tsp salt till warm; stir constantly
- add to flour mixture
- combine 3 tsp Ener-g egg replacer** with 4 tbsp water; mix thoroughly and add to bowl
- add as much flour as you can stir in with a spoon, up to 2 1/2 cups
- on a floured surface, knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic
- shape into a ball in a greased bowl; turn once, cover and let rest 10 min.
- roll one half of dough into a 12x8" rectangle, spread w/ 1 1/2 tbsp melted soy margarine
- combine 1/4 cup sugar and 1 tsp cinnamon; sprinkle over dough
- roll up from longest side; seal and cut into 12 pieces
- place in a greased 9x1 1/2" round pan
- repeat with other half of dough
- cover and let rise for about 30 min.
- bake at 375 for 20-25 min.
- add enough vanilla soy milk to 1 cup sifted powdered sugar to make the icing( add 1/4 tsp vanilla if the soy milk isn't vanilla-y enough)
* I used Silk vanilla soy milk, Florida Crystals sugar, and Earth Balance soy margarine, but you can use whatever brands you like.
** Ener-g egg replacer is just what I had and I think it's really great, but you can use something else and just follow the instructions on the box to replace 2 eggs.
