No pictures because I am tired and I have a cold (didums to me)

I posted this to food_porn:

I worked out a bit too hard this morning and I've got a cold at the moment so I decided to make myself some food to make me feel better. My wife has gone on a 60 mile cycle (she is mad) and can't do for me, so I went to the supermarket and bought a load of veg.

I started with the salad:

2 handfuls young spinach leaves
1 tomato, sliced
1/3 avocado, sliced
small amount of sliced raw onion
squeeze of lemon

My, that was a lovely salad. I was feeling so tired but I just about had the energy to chop it and serve myself.

I followed with a soup:

This is a bit of a bodge-job because I didn't really have the proper ingredients for Thai coconut milk soup.

water - enough for soup for just me
1/2 chilli
3 cloves garlic, crushed/chopped
1 teaspoon Thai red paste (bodge #1)
2/3 veg stock cube (bodge #2)
some vegetables, chopped (bodge #3, as they weren't very oriental)
slosh of soy sauce
as much creamed coconut as I could be bothered to scrape off the lump (bodge #4: coconut milk is better I think)
1/2 cup cooked rice (bodge #5 as I didn't have any noodles but I have a lot of cooked rice I need to use up)
handful frozen baby soy beans (edamame) - the recipe I mostly didn't use called for tofu, but I was excited to try this for the 1st time (bodge #6)
squeeze of lemon (added after cooking to maximise vitamin C absorption)

I made the stock up, boiled all the ingredients together and simmered until the veg was cooked. It tasted great.

I am finishing it off with a small bar of Maya Gold (organic dark chocolate with orange and spices). /food porn

Exercise today: I walked for 30 minutes then did 1 hour of Pilates. That was a bit too much; I need to wait until I have recovered from my cold before I do exercise for more than 30 minutes.
