Aubergine and grilled tofu curry with tomatoes and mushrooms on a bed of rice.

This is my first attempt at food photography, plus my camera is really basic, so please bear with me.


1 tablespoon vegetable ghee
3/4 of an aubergine
1 onion
tofu, squared then grilled by the lovely foibey
handful of mushrooms
as much garlic as I could be bothered crushing
2 teaspoons hot curry powder
1 teaspoon chilli powder
1/2 teaspoon cumin
1 tin of chopped tomatoes

economy white rice - boiled

I fried the vegetables and tofu, added the crushed garlic and spices, fried some more. I put in the tin of tomatoes, brought to the boil, then simmered for 10 minutes or so. It would have been better with fresh chillies from the Bangla supermarket, but we don't have any at the moment.
