Pressure cookers are fantastic, and the molecular gastronomy folks have been into them for a while. They take up a pretty huge amount of cupboard space or I'd have one already!
Heston Blumenthal recommends them for stocks in particular - I believe the Fat Duck uses them for that purpose.
Slate magazine obviously doesn't have a Grandma. The damn things never went away. (Although I'm now greatly amused that my Nan is a proto-molecular gastronomist ;) )
