ok, i haven't had time to get anywhere near a computer till this morning. been working doubles every day, and slept in yesterday. new place is cool. nothing special, but my flat mates are cool. i was partying with them sat night, and i made plans to go out with patrick on friday and hit the clubs or something. i've got wed off, then 2 doubles and the weekend off (:. i like the 4 doubles, 3 days off deal. it's not so hard to work for so long when everyone does it. back home, working a double sucks cause everyone leaves around when the shift changes, but you have to stay. here, everyone works the double, so it's fine. wed sucked. i didn't have my shit together, and i was struggling all day, was almost late for work. and just downhill from there. i've since gotten my feet about me, and i'm doing well. starting to learn cold and hot appetizers. hopefully i'll be able to move up soon. it's funny to see that everyone's only been there a short while. 6 mos is about the average. i haven't gotten to do anything, just work, but i'm becoming friends with the staff, so it's cool. i don't mind it now, work isn't so bad. i don't really notice it, and just hang out with my friends. we've always been raised to believe that all chefs in europe are amazing, but they're not. they just work long hours, and are organized. i've developed a system now, so i can get through everything easily, and when i roll canapes, i've got a deal worked out with steve that he helps me do them, and i give him some of my time in return. it's good. i'm almost out of time now, and i have to work soon. i love you all, i'll post on wed. -Aaron.
