This is simplified version of Nasi Lemak that only takes me about an hour to cook everything. I guess the hardest part would be the chilli but even I got a trick to that. Hee Hee
Ingredients
Rice
Coconut Milk/cream
Fish (chicken wings or mackeral can be used)
Eggs
Ikan Billis
Peanuts
Onions
Sugar
Blechan
Salt
Pepper
Pandan Leaves
Tomato sauce
4 slices Ginger
Tumeric powder
cucumber
Lemon juice (optional)
Fresh pounded chilli mixed with blechan or bottled chiili
Method
Rice:
Wash desired amount of rice. I normally cook 3-4 cups.
Add 1/4 part coconut cream and 3/4 part water to cook the rice (be careful not to add too my coconut as the rice might not cook well)
Add ginger and pandan leaves ( tie the pandan leave into a knot)
Add one teaspoon of salt
Place in rice cooker and cook.
Fish/meat:
Season fish with salt, pepper and tumeric powder
Heat oil to deep fry or shallow fry
Once oil is heated, fry fish till cooked. The crispier the better.
Drain fish on paper towels
Ikan Billis:
Fry Ikan Billis in hot oil.
Drain on paper towels when cooked
Peanuts:
Heat pan
Lightly toast the peanuts on medium heat till golden brown
Egg:
Beat desired number of eggs. I use 4
Add salt
Fry how you would an omelette in a 26cm round fry pan
Cut into pieces
Chilli:
Slice some onions thinly
Cut into pieces 1 table spoon of blechan
Heat oil, once heated fry onions till soft
Put in blechan till fragrant
Add in desired bottled chilli (I will find the brand and name of the chilli. It can be bought in the asian shops. The name is "sambal" for nasi lemak)
Add on table spoon tomato sauce and one table spoon sugar
A squeeze of lemoon juice can be added however optional
Adjust amount sugar and tomato sauce to taste
Remove chilli mixture and cool
*You can serve with cumcumber
Note: You can cook other dishes to go with this meal. My mom likes to cook sambal squid. You can also have otak too.
The hardest bit would be estimation of ingredients. For example, I had to cook the rice a number of times on each occassion to find out the quantity of coconut and water. So it's all trial and error for me too.
Serve all dished together
