My dad was asking what I've been cooking lately, so I thought I would keep track for a while of what I've had for dinner. Feel free to skim/skip if I start to get boring. :)
Monday: fresh egg pasta, sauteed zucchini, canned mackerel, capers, lemon
We've been trying a bunch of Italian fish/pasta combinations based on these recipes from the Splendid Table's Weeknight Kitchen:
Spaghetti Aglio-Olio (with garlic and olive oil) - vegetarian Tagliarini with Lemon Anchovy Sauce
Fettuccine with Fresh Tuna, Lemon, Capers, and Olives (Zingerman's recipe) Those first two use an interesting technique of making a pasta sauce by cooking some things (garlic especially) and then adding a bunch of water to the hot skillet to bring the temperature down and infuse the water with flavor to coat the pasta. Neat!
Tuesday: surprise Kielbasa sausage, cabbage sauteed in a skillet with spices and a little vinegar, potatoes tossed with butter
The sausage was a surprise because I had never bought it before and I didn't know what it would taste like, but it turned out to be a kielbasa! With a different French name that I promptly forgot.
Wednesday: lamb burgers (ground lamb shoulder, garlic, onion, egg, bread crumbs, fresh mint! ground cumin, and ground coriander) with cucumber + garlic + yogurt salad
Thursday: leftover lamb burgers?
Friday - Sunday: in London and Oxford!
