Good idea, surely if it was just a title due to the place he came from, then through out the years surely the Boeshane Peninsula would have other 'faces'.

I'm still going on the idea that it's pure coincidence. The Boeshane Peninsula just was, and Jack got the nickname regardless (or, perhaps, because) of the fact that there's a gigantic head by that same name. Or, maybe, the Face of Boe wasn't around at the time of his birth and it's still pure coincidence.
As he ages and learns about the Face of Boe, he will be amused yet eternally human. Because, you know, he is kept immortal in approximately the same state, and a huge shift in species would be impossible.
I can't remember who or where but someone said that seeing as Jack's been researching the Doctor for years, and he's travelled with him, he must know about the Face of Boe. So as a way to keep the Doctor guessing, and as a coincidence that is just to fun to keep to himself, he hints to the Doctor that he is the Face of Boe, and backs it up with a "I'm getting a grey hair" story. To keep the Doctor guessing and as a possible question the Doctor might want asked. A verbal calling card, if you will :)
