I hate eating salsa but I love making it.

Caroline's Roasted Tomatillo Salsa:

~dozen fresh tomatillos, husked
6 garlic cloves (husk on)
4-5 serrano peppers (or 2 jalapenos if you like it less spicy)
1 small onion
a handful of cilantro
juice of one lime

Broil the tomatillos, garlic and peppers for a few minutes, turning once. Broil 'em till they are slightly blackened. After taking them out of the broiler, peel the garlic and pull the stems off the peppers.
Place all ingredients in a food processor and blend until smooth.

Serve chilled to Jacob's delight.
