Blueberry-Spinach or Blueberry-Beet Smoothies
3/4 cup frozen blueberries
7 oz tofu* (more or less 1/2 block) OR 7 oz plain Greek yogurt (1 small container)
1/2 cup any cow milk or cow-milk substitute
1/4 cup spinach OR 1/4 cup canned sliced beets
3 packets Sweet'N Low (about 1/4 cup sugar, or convert to another sweetener using
this guide)
Blend. Serves you and two lovelies.
*I use
Nasoya-brand Lite Firm. It blends fine, but if you prefer, silken tofu is made for this sort of thing.
