So i've got one more day to get ready for this trip. luckily everything is pretty much set to go. crap, this is exciting.

i felt like experimenting thisafternoon. So I whipped up a weird little warm salad. Strangely tasty.

Warm Beef & Balsamic Salad
2 cups chopped iceberg
1/2 c. sliced beef tips
1 roma tomato
1/3 c minced onion
1 tsp minced garlic
1 handful minced herbs (i just grabbed some basil, thyme, parsley, and rosemary from my garden)
balsamic vinegar
sea salt
powdered mustard
gr. white pepper (can use black but i prefer sharpness of white for dressings, rose would also work excellently.)
red pepper flakes
evoo

First saute the onions and garlic until translucent. Add beef and saute til med. rare. remove from heat and fold in chopped tomato and herbs. add 1 tblsp balsamic. mix 1/3 c balsamic with oil, mustard, sea salt, pepper, and pepper flakes in separate bowl. 
on plate arrange iceberg nicely, top with warm sauteed beef, and drizzle with dressing. garnish with 1/2 tsp of sea salt.

its an interesting combination of warm and cold, spicy, sweet, and sour. you can completely cut out the evoo if you like to reduce fat. Very satisfying and relatively low in calories. Definitely unique.
