I made some stew the other day, instead of buying a pack of cubed steak I got a nice little rolled joint of brisket as there was more of it for less (go figure), anyhow after making stew there was a nice square bit left.

So this afternoon I knocked up a bit of stuffing out of breadcrumbs, grated cheese, garlic, butter, herbs and some salt and pepper, spread it over the brisket and rolled it back up (was a bit more folded than rolled but you get the idea), sealed then roasted it and had it with some roasted carrots, swede, parsnip & potatoes and a bit of nice gravy from all the meat and stuffing juice.
