Dean and Death- help me understand

I've been rewatching 6x11, Appointment in Samarra, recently. And since then I've been rewatching it and rewatching it, and I feel like I don't understand something. I would love to hear your thoughts on this!

It's obvious that Death is the only being Dean is actually afraid of. Death intimidated Dean in a way no other entity ever has, not even Lucifer. When Dean met the devil, there was also fear involved, but it was fear for Sam, so that was a different situation, and I figure that Dean still thought of Lucifer as an angel and therefore something he knew how to deal with to some extent. With Death, he doesn't, but so far Dean has never been afraid even then. And neither can it be the fact that Death is a Horseman of the Apocalypse, for he met the other three before and cut their fingers off or whatever- not so respectful and all. But Dean deeply respects Death, obeys him when Death orders him to "SIT!" (like a dog, I thought), and averts his eyes when he fears he annoyed Death. WHY? Dean doesn't fear dying. He has taken a glimpse behind the curtain, and though he may not like what he saw, it still doesn't explain this shyness/angst/whatever between Dean and Death. There is an expression in his eyes that never shows except when Death scolds him:

And another question: Does anyone know any fanfictions with Dean and Death? I mean Death as a being, not just Dean as a reaper (though I wouldn't mind that if Death was still in that fic personally as well).
