Today's dinner

Mostly I need to document it because Tulio really liked it and it consisted of things he typically does not like (like tofu and carrots) so I need to remember how I made it.




Tofu: pressed and tossed with soy sauce then pan fried with a little oil on high heat until golden and then coated with nutritional yeast.
Carrots: grated and tossed with vinegar, Sriracha chili sauce, and a little salt and sugar

Cut the little hoagy buns and toast them under the broiler until smoke comes out of the oven, scrape off the burnt bits, spread both sides with mayonnaise and a few drops of Sriracha, put on tofu squares, top with carrot mixture, put sliced tomatoes on top of that, put the top on, and eat. The salad is just broccoli slaw from a bag (it took me 3 tries to write broccoli correctly) with mayonnaise, vinegar, salt, and sugar.

Clockwise from the bottom we have 2 pans of roasted veggies (I'm thinking about pasta and a wrap sandwich with melty mozzerella...), foil-wrapped roasted beets and garlic (the beets are for a salad and I already forgot what I planned to do with the roasted garlic), and what's left of the tofu. YUM!

And finally, here's some spinning -- I've been working on this lace weight merino EVERY DAY but it looks like the cop is not growing. But it really must be.
