Have you seen the deleted scenes from EoD's? There was a scene with Tosh, Ianto and Jack that took place at the same time as Gwen and Rhys down in the Vaults and then the extended scene of Jack and Gwen in the field prior to Abaddon. Those scenes were cut purely for a timing issue and they wanted to keep them in but could not fit them. There is a fabulous line from Ianto which explains so much about him and shows that those words said in the heat of the moment back in Cyberwoman, he has moved on. Plus Jack repeats the line to Gwen while in the field which turns the scene that many see as a Gwack moment to a Janto one. I think Jack chose her because he knew that she wouldn't be able to stop him and that she would stay out of the way and be safe if he ordered her to as she wants to live to be with Rhys. So even in its cut state now, that scene isn't really a Gwack moment to me.

Crabby Lioness is the one who said after watching Cyberwoman that Jack and ianto should have sent out engraved wedding invitations. There is just so much passion, attraction and pleading with each other to be on their side between the two of them.
