If we're generous and say she started as an editor at the ripe young age of 2 that makes her 50.
It wouldn't be out of the realm of possibility the doesn't really know what the internet is or how copyright law pertains to the internet. I've got a lot of students that think that anything they find on the internet is free and that no one owns it (until I quickly disabuse them of that belief.)
Ms. Griggs may also have missed the change in copyright law removing the requirement to either register your copyright or label your intellectual property with a copyright notice. Although that doesn't seem to have stopped her since she's also stolen material from websites clearly labeled with copyright.
But any judge will tell her that ignorance is no excuse. Right before he lays a heavy fine and or jail time on her.
I understand she's stolen from the wrong people. I believe I read Paula Deen, Martha Stewart and Disney.
I imagine any of these three's lawyers will squish Griggs like a bug. Gaudio may not get her apology, but someone is going to get Grigg's pound of flesh.
Sous Vide perhaps.
