It's quite inspiring to read about your job ideas. The good local/organic food idea is one I heard about just recently - it's bugging me that I can't remember the specifics of it, other than the person talking about it had made contacts who could help her establish a network for local farm-to-market produce.
Do you have a specific source for "green job" opportunities or is it more of looking into the companies just out there advertising to see if they are "green" before you apply?
I'm really glad that you've come to the realization that it's important to do what makes you happy, rather than to do what is expected of you. I haven't found a lot of support out there for that type of attitude - I get a lot of flack from family and friends for choosing to do things I like over things that they consider more prestigious. Not that my current situation is either prestigious or makes me happy, but that's an entirely different situation.
I was watching something on Discovery last night about ice cream and the people who do the quality testing and the R&D. It was "cool." And I totally thought of you because of your food science major.
