There is a ramen house I went to in Chinatown that I can't go back to because I found out after the fact that nothing there is vegetarian. Including what I ate. But I know it was at the corner of Bowery and either Pell or Bayard, about one or two doors in from Bowery. TOTALLY awesome food, and also really neat atmosphere. It's the kind of place that looks like they just picked the whole thing up out of Japan and dropped it in Chinatown.
Sometime we should get a group together to do a food tour type day like this. Maybe come up with an itinerary that would be veggie friendly and meat eater friendly. I'd love to wander around and try little nibbles all over the city. Sounds awesome.
