I weighed those tomatoes - sort of. I think I must have gotten about 20 lbs. At any rate, tomatoes are mostly water and they have now been reduced in two batches. I took out the skins by hand but the seeds are in the sauce which is reducing further. It's in a big pot but I don't know how many quarts yet. A 6 quart pot? I've no idea. Anyway, the big sauce pot is full of home made sauce from scratch, with herbs I picked with my own two hands. And it's reducing, and tastes amazing.
Tonight we're having spaghetti and meatballs (pork, egg, matzoh meal, fresh basil and shallots), and who knows about tomorrow, but I wouldn't be surprised it were the same thing.
I'll can the rest of the sauce later in the week. It's amazing how many tomatoes it takes to make this amount of sauce. WOW. I have a bruise on my shoulder from carrying the damn things home, you'd think I'd get more for my trouble :D
Ah well - sauce is essence - tomato soul. I'll be so happy in January when I eat this!
