The PAX on the corner of 23rd and Lex may be what you're looking for.

If it helps, I think the term you're looking for (at least in the industry) is "fast casual." Hope you find a spot :)

Most locations of Le Pain Quotiden have the walk-up/fast casual option. I'd also recommend Cosi. Or pretty much any by-the-slice pizza joint, Qdoba/Chipotle, Starbucks and whathaveyou. I also thought that a Panera had opened on 7th ave b/t 29th & 30th (http://ny.eater.com/archives/2011/04/panera.php ) - has that not happened yet?

Curry in a Hurry on 28th and Lex if you want a tasty non-sandwich-focused option, with a good amount of seating. Also, many of the other Indian places in the area do lunch buffets, which isn't exactly what you described but would be fast, casual, and seat-yourself. There's Hale and Hearty, but they probably wouldn't have enough seating for 10-15 without lots of awkward pushing together of tables and whatnot.
