Save the Cow

I ate a bunch of meals at Holy Cow when I was in Eugene last summer, and man was it delicious. Not to mention, everything was vegetarian, and they support organic, locally sourced ingredients. They also minimize waste by using reusable wares for in-house dining and providing a compost bin for uneaten food.

The directors of the EMU (UO's student union) are trying to replace Holy Cow with Laughing Planet, a partially vegetarian burrito place that, to be honest, wasn't that great when I tried it. Laughing Planet is a chain, albeit a relatively responsible one. It's just not the same as the tasty Holy Cow that I've been craving ever since I left Eugene.

There is a pretty big movement at the UO to "Save the Cow," and a pretty good article about it in The Emerald, one of UO's student newspapers (they have several).
