I made supereasy BBQ pulled pork in the crockpot today (adapted from crockpot365.blogspot.com) :
  1. Slice one onion and line the bottom of the pot.
  2. Put pork tenderloin on top. (We had a bone-in one from the pig my cousin raised, Skittles).
  3. Make barbecue sauce (roughly from Mark Bittman's How to Cook Everything) mix together:
    1. 2 cups ketchup
    2. 1/2 c red wine
    3. 1/4 c rice vinegar
    4. 1/4 c chipotles in adobo, minced
    5. 1 T Worchestershire sauce
    6. 1 clove garlic, minced
    7. Salt and peppah
  4. Dump sauce over top of pork.
  5. Turn crockpot on low.
  6. Wait 9 hours or so (no peeking!)
  7. Put pork onto plate and shred to bits with two forks
  8. Put sauce into measuring cup, let sit for 5 minutes, then skim fat.
  9. Put pork on plate, top with sauce, and repeat as necessary.
So. Good.
