I made supereasy BBQ pulled pork in the crockpot today (adapted from
crockpot365.blogspot.com) :
- Slice one onion and line the bottom of the pot.
- Put pork tenderloin on top. (We had a bone-in one from the pig my cousin raised, Skittles).
- Make barbecue sauce (roughly from Mark Bittman's How to Cook Everything) mix together:
- 2 cups ketchup
- 1/2 c red wine
- 1/4 c rice vinegar
- 1/4 c chipotles in adobo, minced
- 1 T Worchestershire sauce
- 1 clove garlic, minced
- Salt and peppah
- Dump sauce over top of pork.
- Turn crockpot on low.
- Wait 9 hours or so (no peeking!)
- Put pork onto plate and shred to bits with two forks
- Put sauce into measuring cup, let sit for 5 minutes, then skim fat.
- Put pork on plate, top with sauce, and repeat as necessary.
So. Good.
