I must have the same problem translating food stuff, except I have it the other way around. And it seems that like all fish here is called .. fish! No difference between kabeljauw or other types of fish.. hehehe.
And don't worry bout the shiftstick thing, I am sure you'll get the hang of changing gears just fine. You should find you a quiet road (which shouldn't be to hard in West-Friesland ;)) and just practise for a while without having to worry about angry drivers behind you:)
Btw, I was curious - how long can you drive using your US drivers licence, before youhave to chance it into a Dutch one? And will you have to take another practical or theoretical test? Just curious.
My dad's family comes from West-Friesland, he grew up in Blokker. My aunt&uncle live in Medemblik (or Muggenblik how my granddad used to call it, no clue why though - perhaps he thought there were lots of mosquitos out there cause of the water or something heh)!:) I have passed by the little castle several times but must admit I never visited inside.
