Tasty Success

 Well, it finally happened. After two weeks of eating ramen, peanut butter, other people's baked goods, and other people's dinner parties, I finally actually cooked. I didn't use a recipe, I just kind of went for it. I assessed what was available, chose a general direction I wanted to go, turned on the stove, and started chopping. My experimental approach probably took a lot longer than it needed to, but the result was very tasty - an opinion that is also held by two of my housemates. It's also really good cold. [Is currently eating cold for lunch.] The recipe is below.

~ Summer Squash and Onion Quinoa ~

To a large frying/saucepan add:
1 tablespoon olive oil
1 red onion - chopped
A tablespoon chopped garlic (mine was from a jar)
2 large teaspoons of pesto
½ cup of water (add once everything else has been mixed together and cooked for a minute or so)

Sautee/cook onions

Add:
1 large-ish summer squash - sliced
2 cups water

Bring to boil

Add:
1 cup dry quinoa
A sprinkling of chili power (to taste)
A goodly dose of garlic salt (to taste)

Continue stirring and adding water as necessary until quinoa is cooked (has lost whiteness and is more translucent)

Add in last 5-10 minutes:
1 tomato - diced
