Jack doesn't give up easily, does he? Thankfully Ianto is even more immovable and won't let Jack get away with anything idiotic. Building sandcastles is a lot more fun, not to mention a lot safer, than trying to ride a pterodactyl. Jack will thank Ianto later for putting his foot down. Possibly.

Haha yep, Jack is one determined guy! But I think Ianto's dealt with these kinds of shenanigans from him before enough times that he knows the drill.
