Forget grass--eat your lawn!

Homemade cheese made simple. Hee. I used to make what was called "yogurt cheese" pretty much the same way. Save I did it in a brightbox--a wooden box, with a screen door, and one single incandescent light bulb--that I made both homemade yogurt, and cheese in.

It's too hot to move much, plus, we don't have any ingredients for these, but--here you go anyway.

Watermelon Lemonade

This one's simple.

Juice of 3 lemons
2 Tblsp honey
3 cups seedless watermelon
1/2 cup apple juice or cider

Combine all ingredients in your blender. Hit frappe and serve over crushed ice. How easy is that?

Ginger Slaw

This one's more complex.

1/2 cup mayonnaise or veganaise
1/2 Tblsp toasted sesame oil
1 Tblsp Dijon mustard
1 tsp onion powder
2-3 Tblsp brown sugar
2 Tblsp grated ginger, plus any ginger juice that came from grating the ginger
2 cloves garlic
1/2 tsp black pepper
2 Tblsp soy sauce
1 Tblsp rice wine vinegar
2 cups finely shredded Napa cabbage (or bok choi, or white cabbage--whatever)
4 cups finely shredded red cabbage
1 cup shredded carrot
1/3 cup chopped Italian flat leaf parsley (same deal--flat leaf, or curly-leaf, or cilantro--whatever you like)

Put the first ten ingredients into a food processor or blender; blend until smooth. Add this mix to the cabbage, carrot and parsley, and toss well. Chill for an hour, and serve cold.

Chilled Cucumber/Avocado Soup

1 clove garlic, peeled
1 large cucumber (about 12 oz.), peeled, seeded and cut into chunks
2 large ripe avocados, peeled and pitted
14 1/2 oz. can vegetable broth (about 2 cups)
1/4 tsp salt, or to taste
1/8 tsp cayenne pepper
1/4 cup chopped fresh chives or 2 Tblsp chopped fresh dill
Plain yogurt, salsa, mango-flavored vinegar or diced tofu for garnish (optional)

In a food processor with the motor running, or in a blender, chop garlic clove until minced (but of course you can add more!). Add cucumber and avocados; puree. Add broth, salt and cayenne pepper to processor; pulse until smooth.

Transfer mixture to a metal bowl set over a larger bowl of ice cubes. Stir soup until well-chilled, about 2 minutes, or refrigerate up to 24 hours before serving. Transfer to chilled soup bowls; sprinkle with chives or dill. Garnish as desired. Makes 4 cups soup, about 4 servings.
