So they were nagging me. They were nagging me and nagging me. And I'm not talking the adults here, I'm talking the kids. And I was really getting resentful. Finally I got up from the chair, grimacing, fully intent on relishing each and every bit of my bad mood, when the lights went out.

But not everywhere. Though the lights were out in the garage--where the breaker panel was--the washer and dryer were spinning. And though all of downstairs was out, the upstairs wasn't.

Okay, Loki. I get it. This is no big deal.

Laughing, I watched as the family scurried about, flipping the breakers, restoring light and life, and then I got to work.

And I have to admit, I actually am glad I did, because I inadvertently discovered the bestest TVP loaf recipe EVER:

Herbed TVP Loaf

3 cups TVP granules
2 1/2 cups water, boiling (I misread this and thought it was 2 1/4 cups, but added in supplemental ingredients, should work out fine)
1/4 catsup (I increased this a tad, also added some steak sauce and some Tabasco for fun)
1 tsp basil
1/2 cup onion (another place where I goofed--I chopped a whole onion up, it's going to be HUGE ONIONY)
2 Tblsp olive oil
1 cup flour, gluten preferred, or whole wheat
1 tsp salt (I used garlic salt)
1/4 tsp pepper
1/2 tsp garlic powder
1/2 tsp oregano
1/2 tsp marjoram
1/2 cup chopped fresh parsley (I omitted this, we didn't have any, and instead, added a handful of crushed walnuts, a handful of Parmesan, and a handful of facon bits)

* Mix the TVP, boiling water, ketchup and basil together in a large bowl; set aside.

* Chop your onion fine and microwave it in the oil for 2 to 4 minutes, depending on your microwave. Alternatively, saute in the oil in a pan until just translucent.

* Add the onions to the TVP, and stir in all remaining ingredients.

* Lightly oil a loaf or bread pan (I used a ceramic square casserole), and pack mixture in TIGHT, smoothing the top. Bake at 350 degrees for 45 minutes or so. If it gets too brown on top, cover it in foil.

* Let stand in the pan after it comes out for ten minutes, then run a knife along the outside to loosen it, and turn loaf out onto a platter. Slice into 16 to 18 slices. Garnish with lemon slices and springs of fresh parsley, and serve with tomato sauce or mushroom gravy.

Nice nice nice, and it went together so smoothly! Yay!
