Self Feeding 101

Is there a self feeding 101 course I can take? So, the ped gave me a bit of a lecture on not allowing Josh to self feed enough, which she's totally right about and I've been really trying hard since... 3 days ago. LOL But still, gotta start somewhere, right? So. I am literally unable to handle the anxiety of watching Josh shove undissolvable food chunks into his mouth and, being a one year old, start shaking his head back and forth, rocking violently and slamming himself against the back of his chair and other terrible acts that scare me half to death. God, does the anxiety get better? I feel so out of control when he feeds himself and I hate that feeling. (Yeah, I have issues, I know.) So far he's done perfectly fine with roasted chicken breast, beef ravioli, french fries, different cheeses, different bread-like foods and fruit. I've had to leave the room and allow Matt to supervise the feeding because I cannot watch him eat. We still have a ton of purees in the freezer, so those ARE getting used up, but I'm actively trying to incorporate some self-feeding options into every meal and Josh ADORES the independence. He's all over food when he can do it himself, but whines and complains at the purees. I don't know how to let go and convince myself that he's fine chewing his own food. HALP!
