He is actually considered one of the living masters of modern origami.

Here is a video of Kamiya-san folding his signature phoenix model:

In the video, you can see him employing various modern techniques. For example, he begins by making creases for a complex tessalation. Tessalation is a folding method to compact a lot of paper into a small volume to make patterns (scales, feathers, fur) and thin appendages (claws, antennae, horns). An example of a simple tessalation would be accordian folding for a paper fan. They can be extremely difficult and tedious because you repeat the same folding pattern over and over again while making sure that all of iterations are the same shape and size.

It's also important to note that he is using washi paper. Washi paper is vital for advanced models such as the phoenix because it can withstand hundreds of intersecting creases at the same point on the paper without tearing. It is also soft and pliable enough for shaping curves to make details.

If you decide to get the book, I would have to warn you that a lot of his work is very advanced, especially the dragon models. Fortunately, the chocobo model is on the intermediate level and very accessible.

My brother found the pdf diagram of his chocobo model and tried to fold it. I can send you a copy of it if you want. I would rate the model as intermediate.
