I couldn't sew to save my life

Okay, I admit it : I am a sewing failure.
I've tried to sew two diapers now and failed miserably. While overall they don't look terrible, I've screwed them up. Twice now I've put the soakers on backwards (I had a layer of PUL), and I cannot get my leg elastics to elasticize. They elasticize a little bit, but not very much, not nearly enough. And yes I am pulling it taut when I zigzag stitch it.
So my daughter is walking around in a gaping failure of what was supposed to be a fleece diaper.

I have a serger, but 1) I cannot figure out how to use it, and 2) I have either misplaced the foot pedal or the person who gave it to me never supplied me with one. Either is possible, as we've moved three times since I've had it and I still haven't used it.

I'm using a 'turned and topstitched' idea, and cut my own pattern as I can't afford to go out and buy new ones. I'm extremely green to sewing. It's rather disappointing to waste money and so much time on fabric that I'm so tempted to just trash.
Anyone who sews diapers, do you have tips? Is there some big secret that I have yet to be let in on or do I just really suck at this? (Someone tell me I'll get better!)
