I agree with your rating of the ending, but I have to admit that Griet choosing a normal life was the realistic ending because she and her family seemed to be staunch Calvinists and she wasn't going to run off with him because of those beliefs and also because of her general personality.
But I didn't expect her to run off with him, as I said that would be just as distasteful of an ending. It was the lack of art in her life afterward; going back to just arranging the vegetables in patterns and colors that was disappointing. She had her eyes opened, and then had no outlet for creativity. I found that sad.
