I am experimenting with iced coffee recipes. Currently I'm trying one that has involved leaving ground coffee in a jug of cold water for 12 hours. Being impatient I tested it this evening, at approximately 8 hours. It is not the cup of delicious tasty coffee liquid that I was promised. Iced tea, put two tea bags, a slice of lemon, and a pinch of bicarb into a pan, bring to the boil, let it cool, and then pour over lots of ice, or put in the fridge. YUM. Also good with added thyme, or lavender, or mint. Delicious.

I think it's to do with stopping the tea tasting bitter. I think it stops it tasting stewed. Don't know why though. Some recipes include a teaspoon of honey, or sugar too.
