Elderberries

I've discovered eight elderberry bushes last year and made about eight gallons of elderberry oxymel juice last year.  This year I discovered there are two additional bushes, but not on the island.  These are on Kingfisher Lane.

I harvested all I could find, then Sarah May let me harvest some of hers.  It was nice to be able to have more than I grew.  I don't know how many gallons there are this year, maybe eight again, but there are lots of pint jars of it, also.  I even had to dip into the jar storage in Grandma's Cottage, formerly the Gypsy Cabin.

I wonder how to propagate elderberry bushes.  Perhaps I can just stick a piece into the ground.

The honey I used for most of the oxymel was crystallized and has settled at the bottom.  It doesn't seem to be interested in liquifying and mixing into the apple cider vinegar.

Elderberry Oxymel Recipe

1 part elderberries

1 part Honey

1 part Apple Cider vinegar
