"Let the sun rain down on me"

Why is it that I can make pretty nice book covers for my sisters' NaNo Novels, but when I try to make one for my own, I can't even begin to think what I could put on the front. There's nowhere near enough stock photos of robots (from what I've found, anyway) and I can't think of any other themes of the book. I'm probably going to go with some sort of line of people in suits or something, to represent the Evil Corporation partly responsible for the end of the world. Or a can of beans, since that's what the heroes are living off.

Day Twenty One - A Recipe

I did Food Technology to A Level, and actually did quite well - I got an A*, and my exam result when I took the AS exam were in the top three in the country.

That being said, I'm not a great cook. I can make stuff, but it often goes wrong. I've put too much chilli powder in meals, burned cakes, and, well, don't get me started on the cooking failures I've made since I started trying to make Slimming World-friendly meals.

The cheesecakes I make - before I started eating healthily anyway - are pretty good, if I say so myself. It's a recipe taken from my food tech lessons, with a few modifications.

Baileys Cheesecake
(serves 6)

12 digestive biscuits, crushed
50g margarine
150g soft cream cheese
150ml double cream
50g caster sugar
a good splash of baileys irish liquer
chocolate, for decoration

Melt the margarine in a small saucepan. Add the crushed biscuits and stir well, until sticking together. Pour into a cake tin (I use plastic cheesecake containers with removable cardboard bottoms), press firmly and leave to set in the fridge.
Mix the cream cheese until soft and malleable. Add the sugar and mix well, until not as gritty. In a seperate bowl, whisk the double cream with an electric whisk until almost solid. Fold into the cheese mix, and add the baileys. Mix well. Pour onto the biscuit base, smooth the top and leave to set in the fridge. Decorate with cocoa powder, choclate sprinkles, malteasers, chopped up chocolate bars or whatever takes your fancy. Cut into six generous slices (or four, or eight, or one :D) and serve.

variations
Use limoncello liquer and ginger biscuits, for a lemon-y flavour. Or use lemon juice.
Use fresh fruit. Use more chocolate. Omit the alcohol. Use chocolate digestives. Use rich tea biscuits; cookies; cottage cheese; quark; mascepone; creme fraiche; fromage frais. Whatever you want :)
