I think that, because of issues about first rights if you post stuff on the 'net, as well as anyone (friended by me, anyway) being able to just steal my writing and claim it as theirs, I'm going to be taking the chapters and outlines down from this journal and I will not be posting them any more. I was planning on doing that eventually, anyway,

You have to friends lock your journal then it doesn't count as publication. It means you have to accept anyone who is going to read your stuff as a friend, of course, but you can always filter their posts if you find reading them is getting too onerous. Publishers don't count publiation to groups of friends or e.g.writers' circles as publication. So I'd suggest taking your stuff down, using your journal just as you said, then starting a new, locked lj and putting your story back up in it. That means your friends/critics can read it!
As soon as you write the first word of a 'literary work' you have copyright. No messing. And anyone who steals your stuff can be sued. But you need to make sure you date your work so that if necessary you can prove it was yours first. LJ enables you to do this. Also, even though thieves could in theory copy stuff to their journals and backdate it, if your friends are reading that's extra insurance. As is the info you put out about new chapters etc.
So, be cautious, but don't panic!
