because, yes I forgot my lunch again. I think I am going to have to get back into the habit of grocery shopping for the office on Mondays and stop trying to bring left overs.

40 Clove Garlic Chicken (Crockpot)

Feeling decadent? Place a whole well-seasoned chicken (for my huge crock pot 2), 40 cloves of garlic, a glass of white wine and let it cook on low for 8-10 hours.

The garlic "roasts" becoming soft and sweet, a lovely spread for bread.

Seasoning is usually Adobo (instead of salt & pepper), paprika, thyme, rosemary & sage.

If you leave the skin on the garlic, you can squeeze the softened garlic onto the bread, but I like to just smash it so I tend to take the skin off too.

Cranberry Dump Cake

1-16 oz. can whole cranberries (either next to cranberry sauce or next to pie fillings in the store)
1-21 oz. can apple pie filling
1 box yellow cake mix
1 stick butter
1/2 cup chopped almond, walnuts or granola

Preheat oven to 325 degrees.
In an ungreased 9 x 13 inch pan dump both cranberries & apple pie filling. Spread mixture evenly. (I sometimes swirl it a bit.)
Sprinkle dry cake mix on top.
Cut up butter and dot top of cake.
Sprinkle nuts and/or granola on top of cake.
Bake 1 hour and 15 minutes.

I think I want to make a pumpkin dump cake. Probably need to make "pie filling" with evaporated milk and spices, and then dump that into the pan with cake and stuff. Hmm, possibilities
