I went shopping for groceries with the intent of buying ingredients for healthy, tasty meals... buying the essentials organic and the rest all natural. All of this within a budget, of course. I bought some at the Co-Op and some at Kroger, mixing name brands and generic, and I am proud to say I succeeded! I even bought a new shampoo bar and Tom's of Maine deodorant.
Monday my husband and I had homemade tacos with organic beef (which was fattier than I would have liked, actually, so I'll just buy Laura's Lean next time), our own taco seasoning(!), and tortillas we made ourselves from cornmeal. They turned out thinner and drier than the last time we made them, (they were too moist and thick then), but they were roughly the shape of
Iceland. So that tears it, I need a tortilla press! I'm going to go look at the International Grocery this weekend. But, mhhmm, those tacos were good. We had organic vanilla bean ice cream for dessert.
Last night (Tuesday) I went all out and made slow-cooker chicken and dumplings, corn casserole, cheese and garlic biscuits, spinach salad from our very own garden (Yay!), oatmeal chocolate chip cookies, and sweet tea, all from scratch! Mike also went out and bought this Italian beer he tried on his trip, Peroni, and it is really good! I was so proud of myself, but it was a lot of work. What made it even cooler though was that Mike went out and harvested the spinach for me, and even watered the garden. He also mixed up the ingredients for the cookies and the biscuits.
Today Mike works closing, so I ate leftovers and some ice cream with chocolate chips and peanuts. Other than that I've just been doing laundry and lazing around. Tomorrow night I plan in making homemade pizza and bread stix for dinner. I still have the makings for oven-baked "fried" chicken with mashed potatoes, and bison burgers with fries. Not to mention more carrot cake, and whole wheat brownies. And of course sandwiches and veggies for lunches.
