Ingredients:
8-10 bone-in skinless chicken thighs/legs, depending on how many pieces each person will eat
1 cup soy sauce
3/4 cup brown sugar
4 cloves garlic, minced
1 tsp grated fresh ginger or 1/2 tsp powdered ginger
1 TBSP sesame seeds
1 TBSP sesame oil
1 TBSP rice wine vinegar
1 tsp chili paste
1 TBSP flour
1 TBSP water
Directions:
1. In a small saucepan over low heat, sautee garlic and sesame seeds in sesame oil until light brown.
2. Add water and flour and whisk 1-2min until a paste forms.
3. Whisk in all other sauce ingredients. Bring to a simmer.
4. Simmer 5-10 minutes until sauce thickens slightly.
5. Remove from heat and let cool to room temp.
6. Arrange chicken in a single layer in a 9x13 pan.
7. Coat with sauce. Let marinate for 1 hour minimum, turning chicken half way through.
8. Heat oven to 375F.
9. Cover pan with tinfoil. Bake 1 hour, turning chicken half way through.
