Beignets

Ingredients:

1/2 cup milk
1/2 cup water
3 TBSP butter
2 tsp sugar
1/4 tsp salt
1/2 tsp vanilla or almond extract
1 cup flour
oil for frying
1/4 cup sugar and 1 tsp cinnamon whisked together for the coating

Directions:

1. Heat oil in a fondue pot or other small pot to 350F.
2. Heat milk, water, sugar, salt, and butter in a medium pan just until it boils.
3. Take off heat and immediately add extract and flour.
4. Stir with rubber spatula or wooden spoon until a soft dough forms.
5. Set dough aside until it's cool enough to handle.
6. Tear (or scoop) dough by 1 tsp portions and drop into oil. Try to make as rounded as possible because rough edges can burn.
7. Fry until golden brown, approx 3-5 minutes.
8. Drain on a paper towel for 1-2 minutes.
9. Roll in cinnamon/sugar mixture until coated.
10. Dip in chocolate, caramel, peanut butter, nutella, etc.
