I love making pesto

Paula jacked my last batch, so this one is a bit different:

Olive Oil (of course)
Fresh Basil (of course)
Ghee (not 'of course', but added for the sensual narcotic flavor and texture)
Garlic (of course)
Walnuts (sometimes 'of course')
Pumpkin Seeds [raw] (I doubt they've ever been an 'of course')
Salt (most likely)
Sundried Tomatoes (perhaps sometimes an 'of course')
Swiss Cheese (I'm sure somebody's used swiss in their pesto, right?)
Parmesan (duh)

Recent variations have included:

Pistachios (not sure they imapacted the flavor much, but it felt sexy adding them!)
Bleu Cheese (VERY yummy, even the folks that swear they don't like Bleu loved it)
Brie (As much as I love Brie, I think it was wasted as it's flavor wasn't strong enough for the pesto and was lost in the shuffle)

Anybody else do any cool variations on the pesto theme?
