Guys, this is quite TL;DR. If want to read only the canon part regarding Super Paper Mario, please, be my guest XD Is just that since Paper Mario is a series, I think all the stories must be told. Also, this contains a whole bunch of SPOILERS for all the three games of the Paper Mario Series, so, be careful, hm?
So, in the first Paper Mario, Peach is hosting a party for everyone at her castle and invites Mario, when he gets there, he meets her in one of the corridors and, when they are chatting, the castle starts shaking and, next thing you know, Peach's house is up in the sky, being lifted by one of Bowser's contraptions. The big guy shows up soon enough, with the Star Rod he stole from Star Haven. The Star Rod's main function is to grant people's wishes, whenever they wish upon a star, but in Bowser's hands it makes him virtually invincible. Mario tries to fight him but is quickly beaten and thrown out of the window, with Peach staying in the castle.
She's locked up in her room and starts grieving the lost of her love, when, suddenly, a baby star called Twink, which witnessed the steal of the Star Rod, comes to her aid. She asks Twink to go look for Mario, see if he's OK and give him a pendant to be given to him to bring him good luck (a pendant that activates, in-game, the action command function).
Twink returns with good news: that Mario is alive and well and fighting to restore the Star Spirits and, ultimately, save her. She's excited, but she wants to do something to help her hero. So, she takes on a multitude of small quests. In first one, she opens up a secret passage in her bedroom's fireplace, only to end up in Bowser's bedroom. When she does, she finds his diary and, with it, she's able to send Mario information about Bowser's next step and where the Star Spirits are hidden, with Twink working as her 'bell boy'.
Although, Bowser ends up finding out about said secret passage and takes the diary away, so then Peach is unable to use it again. Still, she keeps using the secret passage to walk around the castle (minding the guards and their flashlights). With that, she reaches the library, where his minions are discussing the hiding place of yet another Star Spirit, but she's soon thrown into her bedroom once again.
Next, Peach fools Bowser into believing that Mario hates mushrooms, so then he can set up a 'trap' for the plumber. She also bakes a cake for Gourmet Guy so then he'll give her the whereabouts of the next Star Spirit. Finally, she takes part of a 'quiz show' with some of Bowser's minions and, upon winning, she gains the Sneaky Parasol, which gives her the ability to copy any enemy she might want to. With that, Peach starts gaining access to other parts of the castle she couldn't reach before and plans on escaping, but Kammy Koopa ends up seeing through her disguise.
But, after that, it doesn't take long for Mario to arrive and save the day, but, the Star Beam, which was supposed to counter-attack the power of the Star Rod, fails, and Mario is in a tight spot. Peach and Twink, that are witnessing all the fight, think they should try and do something, but Kammy Koopa says it's useless to try and fight. Then, Twink, with his wish of becoming a big star someday, decides to try and defeat Kammy. A first, all his attacks are useless, but as Peach starts wishing for him to get stronger, his power gradually grows, and they are able to defeat the magician.
Now that Twink is stronger due to Peach's wishes, he joins the other Star Spirits, and they all produce the Peach Beam, which is a powered up version of the Star Beam. With that new and improved weapon, Mario is able to defeat Bowser, and the castle goes back to it's original place. In the end, peach throws another party and, this time, it isn't interrupted. The party is followed by a parade to celebrate Mario's victory and, in the very end, him and Peach leave the parade to have some time alone, just the two of them <3
Now, off we go to The Thousand Year Door. The plot here is that Peach and Toadsworth, her protector, go on a trip to Rogue Island in search of a treasure. Everything is fine and dandy, and she even sends Mario a letter to come meet her and help her find said treasure, sending him the map that leads to it, but then Peach is caught by a mysterious bunch called the X-Nauts and is, ultimately, taken to their base in the Moon. Mario comes shortly after that, not knowing about her kidnapping. Not even Toadsworth is aware of such fact, believing that the princess only went to look for the treasure by herself.
So, Peach is on the moon and, after being interrogated by the map she sent to Mario (and she wisely denies having any involvement with it at all, even though the X-Nauts leader, Gordus, doesn't believe her) she is locked in a room. But at least she has a bathroom. She decides that she should take a shower, since there's nothing else to do. When she's done though, the front door of her room gets unlocked. Wondering what could have triggered such thing, Peach walks out to investigate. At the end of the corridor, she finds a huge computer named TEC (which is quite similar to HAL from the movie 2001). TEC tells her that he let her out of her confinement because, well, he started having strange feelings towards her while watching her in her room (and I guess the showering helped...).
The time passes and Peach ends up developing a bound with TEC, as he slowly starts to get more and more affectionate towards her, to the point where he allows her to use his network system to send Mario messages so then she can tell that she's OK and keep him up-to-date with the X-Nauts plans, going against his creator's wishes. They even start developing a plan to stop Gordus plans on taking over the world with the power of the demon sealed behind the infamous Thousand Year Door. But, their 'teaming up' is later discovered by Gordus and he decides to 'terminate' TEC, by wiping out all his memory banks and turning him off for good. By this point though, Mario is already on his way to the moon and it doesn't take long for him to arrive.
Unfortunately, when he gets there, Peach is not there anymore, as the X-Nauts took her to the Thousand Year Door. But why did they take her there? Well, Gordus' plan is to use Peach as a 'vessel' for the demon locked inside the door. When the demon is unleashed, the Shadow Queen is reborn, by merging her body with Peach's and, finally, fighting against Mario when he refuses to join her.
When the Shadow Queen is finally defeated, she leaves Peach's body and disappears, and peace is brought to the world once again. But, for how long?
Finally, we get to the plot on Super Paper Mario!
This one starts out differently. It starts with Peach marrying... Bowser? Something's not quite right around here. Peach, obviously, refuses to accept such unison, but the 'priest's' assistant casts a spell on her and forces her to say "I do." As she does so, a dark, pulsating heart appear, seemingly out of nowhere. At this moment, Luigi comes into scene and tries saving Peach, but is felled by the same assistant that controlled Peach's mind. But before anything else can happen, the strange dark heart emits a strong light and everything simply vanishes, as if it was some bad dream...
The story then 'officially' starts, with Mario and Luigi being told that the Princess had been kidnapped and they, obviously, think that Bowser did it. Although, strangely enough, Bowser didn't even step into the Mushroom Kingdom. He was about to, but when the brothers step into his castle and, ultimately, find out that she isn't there, that leaves all the three characters wondering what could have happened.
Then, a cage holding the princess appears in the sky and we get to know the real villain of the story: Count Bleck, the same guy that was 'marrying' Peach and Bowser not too long ago. He's the owner of the Dark Prognosticus, a book which has in it's pages a fully detailed description on how the end all of the worlds, in all dimensions. mario tries to attack only to be KO'ed by Bleck, who ultimately sucks everything into dark hole created by him. Everything but Mario.
So, what happens to Peach this time? Well, Peach wakes up on what seems to be Count Bleck's hideout: a strange, out of this world place, with darkness everywhere. There, she comes across a Koopa Troopa and Hammer Bro, who are as willing as the princess to get the hell out of there, so they decide to join forces with her to find a way out of that strange dark dimension. unfortunately, both the Koopa and the Hammer Bro get brainwashed, just like the rest of Bowser's minions by Nastasia, Count Bleck's assistant. When Peach herself is about to get brainwashed, she gets warped from the dark dimension. But, where is she now?
Why, she's now in Flipside, the place where Mario is. But, unfortunately, she's out cold and needs a revitalizing soup that can only be made by Flipside's cook, Saffron. mario goes to gather the ingredients for said soup and, finally, Peach is back. And now she's going to help out Mario!
They travel together for a while, recovering the Pure Hearts needed to stop Count Bleck's grim prophecy of world destruction, as the void he created keeps growing and growing in the sky...
Later on, Peach and Mario cross paths with... Bowser! They explain what's happening to him and he's quite pissed by being fooled into believing he was really marrying Peach, so he decided to help the two to destroy him.
More things pass and, when Mario and co. reach outer space, they cross paths with a strange man name Mr. L, which happens to be poor Luigi, who has been brainwashed by Nastasia and is now working under Count Bleck's orders. unfortunately, no one seems to recognize him, and they have countless battles until Luigi finally snaps out of it, after being, well, murdered by Dimentio, one of Bleck's minions. But that isn't exactly a problem because he kills everyone else too, with Mario ending up in the Underwhere with Luigi, Bowser falls into a type of dungeon inside the Underwhere and Peach happens to go to the Overthere.
There, she's unfortunate enough to eat one of the infamous Golden Apples, which make a person sleep for over 100 years! But, she is waken when Mario and co. finally get a hold of the Black Apple, which taste is so repulsive that it can wake up the dead!
So, our heroes finally gather all of the Pure Hearts and off they go to save the day. But one after the other... They die. First Bowser, then Peach. Peach dies while trying to save Mimi, one of Bleck's minions, from certain death, falling into a pit with her (because Peach is that kind). Finally, Luigi bites the dust and it's up to Mario to face Bleck, all by himself.
Sure, defeating Bleck doesn't end things, as you happen to find out that Dimentio was the one pulling the strings all this time. Dimention tries to finish Mario, but it's ultimately defeated. His defeat means the end of the black hole in the sky and everything is restored back to what it was, with the evil minions becoming good again and everyone back to life!
NOW we can have peace XD
[Personality]
Focused on the Paper Mario universe, Peach is shown as someone that's constantly worried about the safety of her friends. She needs to know if they are OK or not, no matter what.
She's also someone you can rely into, even if indirectly. Like in the first two, she feeds Mario info about his enemies actions, hoping that can aid him on his journey. And on the third she's more than decided to join him and lend him a hand on fending their enemies, showing that, yes, she can really fight! She isn't going to do that all the time because she's quite the pacisfist, but that doesn't mean she's going to stand there and wait for someone to hurt her (or her friends for that matter).
Also regarding the third game, which shows her as a more prominent character, you can see that she's quite determined, and when she decides on doing something, nothing can really stop her. This game also shows that she has a forgiving nature towards others, by first allowing Bowser to join them in their adventure and then, in the end, sacrificing her life to save Mimi, the same girl who threatened her and her friends countless times.
More than that, she's highly understanding and affectionate towards others. Like when TEC starts 'falling in love' with her, she doesn't feel the same for him, but she understands him and tries her best to keep him company, really developing a bond with the machine and getting genuinely sad when it's memory banks are erased. See? She even cares about machines!
And even though she might sound quite naive and innocent all the time, she knows how to trick others when needed. But she'll only do that if that means this is going to help her friends, like lying about stuff (like in the first game) or disguising herself and pretending to be someone else (like in the first two). By doing so, she shows that she isn't only a pretty face to be rescued, but she also has brains and it's going to use them.
[Specialties/Abilities]
Peach has no extraordinary abilities, but she's one hell of a cook. Specially when it comes to sweets. So, if you are looking for someone to bake you a cake or make you a pudding, she's the woman you gotta call!
Aside from that, it was made clear on Super Paper Mario (and it was ultimately confirmed on Super Smash Bros) that she can use her umbrella to float around for a short while. It's never clear how she's able to do that. She just seems to know how to do it.
[Affection]
Why, yes PLEASE! Peach welcomes with open arms all acts of affection! Hugs and kisses for everyone! But, since she's in love with dear Mario, any attempt to go further than a peck on the cheek will be answered with a strike of her parasol, right in the face. You've been warned!
[Fighting]
Peach doesn't like fighting. It isn't like she can't fight. If she tries, she can do it, but she would rather not to as she hates violence! She will never start a fight either!
[Other Permissions] Fourth wall breaking is accepted, but not excessively. It's quite possible that Peach will be like "Hm, OK." and then go on her merry way, not minding it much XD Love interactions might be accepted, but I'm still not sure about that.
[Other Facts]
Peach likes pink. Pink all the time and everywhere. Keep that in mind. She also loves flowers of all colors and species. Same can be said about cute animals. She's also quite the pacifist and will try and separate fights.
