This is my perfectd recipe for
vegan protein bars. I took this recipe (decent but lacked in texture) and expiramented and made my own.. so this is it:
Sari's Double Chocolate Protein Bars
1 C vital wheat gluten
1/4 C whole wheat flour
1/2 C turbinado sugar
pinch of salt
1/2 C peanut butter
1 1/4 C vanilla soy milk
1/2 C water
3/4 C carob chips
2 scoops
Spriuteen (any flavor should work, I used chocolate peanut butter because that's what I had)
1 C bob's
red mill extra thick rolled oats1/2 C unsweetened
coconut shavings1/2 C chopped dates (I threw these in simply because I had them)
Preheat oven to 350. In large mixing bowl mix all dry ingredients well - including carob/chocolate chips.
In smaller bowl combine wet ingredients and peanut butter - heat until melted (a minute or two in the microwave works well) and whisk until mixed.
Pour wet over dry in batches and mix. If it's very dry add more soy milk or water - just don't make it too gooey.
Knead dough if you're able to. Pour into baking dish and bake for 35-40 minutes depending on the thickness and how wet your mixture ended up. I sprinkled shredded coconut on top prior to baking for cosmetic appeal.
I also made the
vegan blueberry muffins and they are EXCELLENT! I did substitute whole wheat flour for the white floud and therefore had to add a touch more soy milk - I also used frozen blueberries. Turned out great! I did not have enough muffin cups but other than needing more pan cleaning when done not using muffing papers works fine too as long as you grease the sheet.
