We got some rainbow chard yesterday from the farmers market. I have never had chard that I know of. Every recipe I came across online said to cook it just like spinach, so I did. They turned out okay . . . a little bitter for my palate. I am not the biggest fan of cooked greens, but these looked so pretty, I had to give them a try. Jared seemed to like them. The chard was cooked with olive oil, garlic and salt.
I also made a black eyed pea salad with tomatoes, green onion and a homemade vinegar & olive oil dressing. I actually made the black eyed peas from dried peas, not canned. Very, very good! They had a way better taste than canned. I cooked them in water, liquid smoke and some seasonings.
I also made my famous garlic mashed potatoes.
This was Jared's plate of food and he had some sliced bread slathered with vegan margarine. YUM!
