No, I do not eat avocado everyday. I could, but I don't. Avocado is full of fat, albeit very, very healthy fat and believe it or not, has a shit ton of fiber (no pun intended). This was a crazy amount of avocado for one meal/one person (one small/medium sized avocado, sliced), but since I skipped breakfast and this will be my only meal until Jared gets home . . . I don't feel bad about it at all. Its freakin good and filling!
This lunch was inspired by a sushi roll we use to get at Soho Sushi in Tampa, Fla that actually had vegan sushi options and a sushi chef who loved to make up vegan sushi on the spot. He made something called the "Debbie Roll" that was just rice, seaweed and avocado served w/ this sweet and spicy sesame seed and green onion sauce. While I realize what I made is not sushi, it was the main components of that sushi roll minus the seaweed. The sauce I made was rice wine vinegar, soy sauce, natural sugar (meaning vegan sugar and no, most sugar is not vegan), black and white sesame seeds, green onions, sesame oil and chili oil. The rice was left over and just reheated in a fry pan w/ sesame oil and salt.
