After we played tennis and went swimming this morning I made these awesome waffles. This was an incredibly simple waffle recipe. It had 1 cup of unbleached white flour, 1 cup of soy milk, 1 tbsp agave nectar, 1 tbsp canola oil, 1 tbsp baking powder and a pinch of sea salt. The baking powder made them very fluffy so I had to stir the batter back down to pourable consistency before putting on the hot waffle iron. Our waffle iron is temperamental so we have to put canola oil on the waffle iron so the waffles don't stick. We tried using cooking spray but oil is the trick, no matter what the waffle recipe is.
The fruit mixture was just cup up strawberries macerated in natural sugar and a splash of maple syrup, blueberries and bananas, both thrown in the macerated strawberries so they also get a nice glisten.
