This soup looked like sunshine in a bowl. I sauteed sweet onion in olive oil until translucent and then added carrots, celery, garlic, bay leaves, a splash of liquid smoke, sea salt and pepper. Once that all cooked together for a while I added a can of garbanzo beans, yukon gold potatoes and good amount of dried rosemary. I mashed up some of the soup for a creamy texture. I added a few spinach leaves to the soup bowl and added the hot soup on top to wilt the spinach. I will make this again for sure.
As a side, I made this bruschetta. I modeled this tomato topping after my step mom Delia's bruschetta. It has plum tomatoes, sun dried tomatoes, garlic, basil, red wine vinegar, olive oil, oil of basil, oil of rosemary, oil of garlic, natural sugar and sea salt. I left some of the bread just toasted with olive oil to dip in the soup. So good!
