ingredients:
2-3 slices of smart bacon
one 1/2 inch slice (off the top, not the side) of firm tofu.
one piece of romaine lettuce, cut to fit the bread
two slices of whole wheat or grain bread (you can also use white or a kaiser roll, but whole wheat and grain bread is healthier)
pam, mazola or other cooking spray (butter or olive oil can also be used, but spray is fat free)
1-2 tsp of mayo
spray the pan with cooking spray, and leave the stove on a medium-high heat. toast the bread to your liking, but the bread must be toasted to hold the sandwich together. while the bread is toasting, put the smartbacon on the hot pan and let it cook until cripsy. when turning the bacon, put the tofu on the pan (the tofu takes less time to cook than the bacon) while the bacon and tofu are finishing cooking (the tofu should have about 1-2 minutes on each side, just enough to brown it on each side), spread the mayo on the bread and put the lettuce on one side. then, put on the bacon and tofu, and yum! drink anything you want with it (i personally suggest snapple diet peach iced tea)
